the food

Is everything dairy-free and vegan?

Yes, completely. Every single thing we make is plant-based, with no dairy at all. Our milks, yogurts and fetas start from almonds. The burratas, the jalapeño, thecha and truffle & chives cream cheeses and the mozzarella pearls are made from cashews, and the cottage cheese from watermelon seeds. Each product lists its ingredients.

What is your cheese made from?

Most of it is almond feta: blended almonds, lemon and pink salt, set and brined by hand, then finished by flavour, from cranberry & pistachio to chilli garlic and peppercorn. The soft cheeses are made from cashews instead (vegan burrata, pesto burrata, the jalapeño, thecha and truffle & chives cream cheeses, mozzarella pearls), and the cottage cheese from watermelon seeds; each product’s ingredients are on its page. Never any dairy.

Do you use preservatives or refined sugar?

No. Our promise is simple: no dairy, no refined sugar, no preservatives and no hidden stuff. Everything is made fresh in small batches, the morning it goes out.

How much almond is actually in your almond milk?

We make it with about 72 g of almonds per 300 ml bottle. Ours is three ingredients: almonds, water and a pinch of pink salt.

A shelf-stable carton usually runs to eight or more, because holding a suspension that thin together needs help, emulsifiers, gums and added vitamins. We use none of them, which is also why ours separates in the bottle and needs a shake.

Why are your ingredient lists so short?

Because the food doesn’t need more. The almond milk is three ingredients: almonds, water and a pinch of pink salt. It’s made the morning it reaches you and kept cold, so nothing has to hold it together or keep it stable on a shelf.

Longer ingredient lists exist for good reasons, a carton that has to survive months at room temperature needs emulsifiers, stabilisers and added vitamins to stay drinkable. We just made a different product: one built around freshness instead of shelf life. We censor our names. Never our ingredients.

Is it gluten-free?

Most of what we make has no gluten ingredients. These contain wheat: the beetroot lavash (made with wholewheat flour, and groundnut oil), the bundles that include it (The Spread, the Feta Flight and The Cheese Board), and the Diwali Biscoff kalakand, as Biscoff is made with wheat. If you’re avoiding gluten, message us on WhatsApp about a specific product and we’ll tell you exactly what’s in it.

Why does your food go off so quickly?

Because we make it around freshness rather than around shelf life. Those are two different products, and we chose the first one.

The almond milk is made the morning it reaches you, almonds, water and a pinch of pink salt, so it is good for about two days. The feta is made and brined by hand and keeps ten to twelve days refrigerated, because nothing is added to make it last.

It means planning a little. We think the trade is worth it, and we’d rather tell you exactly what’s in the jar than make it last longer.

How should I store it?

Keep everything refrigerated. Because there are no preservatives, our food is at its best fresh, so enjoy it soon after it arrives.

Can I heat it for tea or coffee?

Yes. Add it to hot tea or coffee, or warm it gently, but don’t bring it to the boil: boiling can make it split.

Is your natural almond milk unsweetened?

Yes. Natural is almonds, filtered water and a pinch of pink salt, with no sweetener of any kind. The lab measured 0 g of sugar in a 75 ml serving. Every other flavour says on its page what it is sweetened with.

How much protein is in your almond milk?

It depends on the flavour. Natural has 1.81 g of protein per 75 ml serving, about 7.2 g in a 300 ml bottle. Each product page shows its lab panel. For scale, dairy milk is about 3.4 g of protein per 100 ml.

Is your almond milk lactose-free?

Yes. It’s made from almonds, water and a pinch of pink salt, there’s no dairy in it at all, so there’s no lactose. That goes for everything we make: the cheeses, nogurts, dips and bliss balls are all built on plants.

Does your almond milk contain gums, emulsifiers or stabilisers?

No. It’s three ingredients, and none of them is a gum. Because nothing artificial holds it together, it separates naturally in the bottle. Give it a shake and it’s back.

What is a nogurt?

Our name for yogurt with no dairy in it: an almond base, thick and tangy, made in small batches. It comes plain and masala, neither with added sweetener.

How much protein is in your products?

Most product pages on this site carry a per-serving nutrition table from our lab data, so you can check the exact figure before you buy. Our parmesan is the highest at 32.3 g per 100 g, and the cacao almond milk leads the drinks at 7 g per 100 ml.

What do you sweeten your products with?

Mostly dates, and often nothing at all. Several products, including the natural almond milk, the natural feta and the plain nogurt, have no added sweetener. Each product page lists its sweetener, or says “none”.

Do you have Jain-friendly products?

Yes. The Jain versions of the original, basil, peppercorn, cranberry & pistachio and podi fetas, the jalapeño cream cheese and the cottage cheese are made with no onion, no garlic and no root vegetables, and they are all together on our Jain page. Chilli garlic and sour cream & onion feta and the thecha cream cheese have onion or garlic in them, and the burrata and mozzarella are set with tapioca, so none of those is Jain. Message us on WhatsApp if you follow specific rules and we’ll go through it ingredient by ingredient.

What is the best almond milk in Mumbai?

It depends what you want from it. A supermarket carton is made to last for months; fresh almond milk is made to be drunk within days. If you want fresh, check three things: how much almond goes into each bottle, whether gums or emulsifiers hold it together, and how long ago it was made. The natural one is just almonds, filtered water and a pinch of pink salt, and it reaches you at dawn, Monday to Saturday.
