fresh vs shelf-stable almond milk
This is not a takedown of cartons. It is a plain description of two different products that happen to share a name.
two different products
Fresh almond milk is a perishable food: made in the morning, delivered cold, good for about two days. Shelf-stable almond milk is a pantry good: heat-treated, stabilised, and drinkable months later without refrigeration.
Neither is lying to you. The carton says what is in it, often a longer list, including emulsifiers and gums. Ours says almonds, water, pink salt, and is made with about 72 g of almonds per 300 ml bottle. The names match; the recipes do not.
the light test
Hold a bottle of ours to a window. Light stops at it, because it is dense with almonds.
It is the simplest check we know, and it needs no lab.
when a carton makes sense
Travelling. A pantry backup. A city we do not deliver to yet. Shelf-stable milk exists because those are real situations, and we would rather you have it than nothing.
But if you drink almond milk daily and live in Mumbai, fresh is worth it: three ingredients, made the morning you drink it.
