People assume the name is about mornings. It is really about what a morning forces you to do.
it started with a problem, not a plan
In 2015 Pardita turned vegan, and found very quickly that the hard part was not turning vegan. It was staying vegan. Fresh, dairy-free food simply was not accessible, and what did sit on the shelves came loaded with preservatives and stabilisers.
So in June 2017 she started Break of Dawn with a single batch of fresh, preservative-free almond milk, delivered chilled to doorsteps at the crack of dawn. Not as a brand exercise. As a way to have the thing she could not buy.
the freshest hour
Dawn is when everything resets. It is the hour before shortcuts, before compromise, when the milk is at its creamiest and the day still holds its promise. That is the moment we bottle.
Our sunrise mark is not decoration. It is that whole idea, drawn in three arcs.
what it costs us
Making at first light is not a romantic detail; it is a constraint we have chosen and it is expensive. There are no preservatives in any of it, which is why the almond milk is good for two days from delivery rather than two months on a shelf. Every batch is small, made by hand, every morning. No factory line.
It would be far easier to make a fortnight's worth on a Monday. We would also have to put something in it to survive the fortnight, and then the label would stop being the honest part.
the hands it passes through
Today an all-women team makes the entire range from scratch. Pardita, a former diamond grader who brought the same eye for quality to food, still has every recipe pass through her hands.
